During the creation of the Channel Tunnel, Phillipe Olivier asked a producer in Deux-Sèvres to make this tunnel-shaped cheese placed on a wooden board for the inaugural meal, in the presence of the Queen of England & the President of the French Republic.
Some restaurateurs from Calais wanted me to continue offering this cheese to their customers. What was a cheesecake has become one of our exclusives.

To go with it, for example, I recommend a Chinon blanc.
