Chef's Tip:

1. Remove the side muscles from the scallops . The side muscle is a little tag of muscle tissue on the side of the scallop that secures it to the shell and may still be on the scallops. It is rubbering and not pleasant to eat

2. Scallops are very quick to cook, just 2 minutes on each side.
