Philippe Olivier have had this small, slightly matured goat cheese made for almost thirty years by a small producer in Poitou-Charente. Its ivory white paste with a creamy flavor must be soft to give off a distinct lactic odor. It can be enjoyed with a hint of honey and a slice of toast for breakfast or as a snack.
