This Auvergne cheese has been made for about a thousand years. He found his name thanks to the Marshal of Saint-Nectaire (or Senneterre) who presented him at the table of the Sun King. Most of the marketing is now industrialized, but there are still a few farmhouse cheese producers and refiners. The Saint-Nectaire must have a fairly thin rind, with white molds and sometimes gray. Its straw flavor is a quality for real amateurs.
