The brine itself is a gift: intensely flavoured, it can be sipped straight from the tin in the traditional Spanish style, used as a base for a seafood broth, or added to a clam pasta for extraordinary depth. The clams themselves are exceptional served simply — cold, on the half shell, with a squeeze of lemon.
