Grind fresh for each brew. As a guide: coarse for French press, medium for filter and pour-over, fine for espresso. Use around 60 g of coffee per litre of water at 92–96°C. [1, 2] Robust enough for espresso and milk drinks. [3, 4] Suits filter, pour-over and espresso equally. [5, 6] Best appreciated as filter or pour-over, where the fermentation character comes through most clearly.
