Created at the end of the 19th century by the Dubuc family in Seine-Maritime, this luxurious cheese was originally known as Excelsior or “Délice des Gourmets” and was reserved for prestigious banquets and fine gastronomic occasions.

In the 1930s, famed fromager Henri Androuët renamed it Brillat-Savarin in honour of Jean Anthelme Brillat-Savarin, the French gastronome and author of The Physiology of Taste. Since then, it has become a symbol of refinement and decadence in French cheese culture.
