The Sole is a flat fish, in the shape of a perfect oval. On one side the skin is creamy white and brownish/sandy on the other side where eyes are located. Our Dover Sole commands more respect in culinary circles than other flatfish. It's firm fillets hold together well in many preparations. Raw meat it's white and dense and cooks up white. It has a is mild and sweet taste.
Despite its delicate flavour, int is best served as Sole meunière with a buttery sauce with capers.
