Seared Wild Sockeye Salmon Poke Bowl

Ingredients (Serves 2):

• 250g Wild Sockeye Salmon fillet, cut into cubes
• 1 tbsp sesame oil
• 1 tbsp soy sauce (or tamari for gluten-free)
• 1 tsp honey or maple syrup
• 1 tsp grated ginger
• 1 clove garlic, minced
• 1 tsp toasted sesame seeds
• 1 cup sushi rice or jasmine rice, cooked
• ½ avocado, sliced
• ½ cup edamame, steamed
• ½ cucumber, julienned
• ¼ cup pickled radish or carrots
• 1 tbsp chopped green onions
• 1 tsp sriracha mayo (optional)
• Lime wedges for serving

Instructions:

1️⃣ Marinate the Salmon:

• In a bowl, mix soy sauce, sesame oil, honey, ginger, and garlic.
• Toss the salmon cubes in the marinade and let sit for 5 minutes.

2️⃣ Sear the Salmon:

• Heat a non-stick pan over medium-high heat.
• Sear the salmon cubes for 30-60 seconds per side, leaving the center slightly raw.
• Sprinkle with toasted sesame seeds.

3️⃣ Assemble the Poke Bowl:

• In a bowl, add a base of warm rice.
• Arrange seared salmon, avocado, edamame, cucumber, and pickled vegetables on top.
• Garnish with green onions and drizzle with sriracha mayo (optional).
• Serve with lime wedges.
