HOW TO STORE FRESH TRUFFLES?

HOW TO STORE FRESH TRUFFLES?

To enjoy your fresh truffle for longer than 2 days we suggest:
Wrapping each truffle in kitchen paper, or at least lining the box with a double layer of kitchen paper, and then storing truffles in an airtight container.
It is important to open the container every day and allow fresh air into it – even if you’re not using the truffles. Every day or 2 you will need to change the kitchen paper which becomeswet. You should also wipe the inside of the container of any moisture that has formed.

STORING TRUFFLES WITH EGGS
We love it when we store our fresh truffles with fresh eggs in a large sealable jar.
Store for a period of 2-3 days which will infuses the yolk with the truffle aroma. Amazing scrambled eggs. 

STORING TRUFFLES WITH RICE

Don't you love some Truffle Risotto! Store your fresh truffles in a large sealable jar for 2-3 days with arborio rice. The truffle aroma and flavour infuses through the rice and makes a magnificent base for truffle risotto.

FREEZING TRUFFLES

Truffles can be kept frozen for up to 3 months but aroma will be fade. There are two ways this can be achieved:

Wrap truffles individually in foil and place into a ziplock freezer bag, squeeze as much air out as possible before sealing the bag, then freeze.
Alternatively, place each truffle in a sealable container, cover with oil or duck fat to create an air barrier, then freeze.

DON'T WATE ANY TRUFFLES BITS
After shaving your truffle you tend to have some leftover bits.
Collect your truffle bits and mix them into some soft butter then place it back in sealable container and in the fridge for a few days. The result some nice homemade truffle butter
IMPORTANT: Moisture is the truffle’s worst enemy - so we suggest changing your paper towel regularly. Truffles lose moisture (weight) and aroma continually. If they grow a little white mould, brush it off under running cold water and dry the truffle well before placing it in the fridge.
