The smoke-cured beef thatĀ Cecinas NietoĀ produces comes from theĀ four pieces that are cut from the back leg. The cuts are called:Ā Silverside, Flank, Topside andĀ Rump.
The entire process of selecting and preparing the meat must last a minimum of 7 monthsĀ to be considered Cecina de Leon PGI (Protected Geographical Identification).
