Bintje is the perfect potato for making light and crispy chips and fries. Peel them, then slice them into regular fries or very thin slices. Avoid rinsing them before cooking. In order to obtain nicely golden fries, fry them a first time in an oil bath heated to 160 ° C and then a second time, after having drained them, in oil at 180-190 ° C. The Bintje potato is also suitable for other preparations: mash, brandade, aligot, gratin, soups, stir-fry, roasted in a casserole or in the oven, in gnocchi etc.
