Pecorino Romano is a salty, hard cheese of Italian origin, renowned for its grating properties. Its name -- a mere translation of "ovine" or "of sheep" -- is descriptive rather than branded; 'pecorino romano' literally means "sheep's [cheese] of Rome".
Since its birth in ancient Rome, the recipe has been kept intact, making it a staple in the diet of Roman legionaries. On the 1st of May, it is customary to take pecorino to the countryside and enjoy it with fava beans in the Italian regions of Central and Southern Italy.
