Abondance Cheese Tart:


  • 1 sheet of pre-made puff pastry, thawed
  • 2 cups of grated Abondance cheese
  • 1/2 cup of heavy cream
  • 2 eggs
  • Salt and pepper to taste
  • Fresh herbs (optional)


  1. Preheat the oven to 220 degrees C (425 degrees F).
  2. Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness.
  3. Place the pastry in a 9-inch tart pan, pressing it firmly into the bottom and sides.
  4. In a medium-sized mixing bowl, mix together the grated Abondance cheese, heavy cream, eggs, salt, and pepper.
  5. Pour the cheese mixture into the pastry-lined tart pan.
  6. Bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  7. Let cool for 10 minutes before serving.
  8. Garnish with fresh herbs such as thyme or rosemary for added flavor (optional)

This recipe is a great appetizer or entrée for any occasion. The Abondance cheese provides a rich, nutty and fruity flavor that pairs nicely with the flaky puff pastry. You can serve it with a side salad or with a glass of white wine or beer.
